Time Out.

As of now, Bonesaw Breweries will be shutting down it's main operations in Knoxville. Minor operations will continue in Nashville through the month of May. Knoxville operations will open again in late July/early August with bigger and better facilities. Until then, we leave you with a picture of our latest bottled brews.

#11 (SA)^2

This was brewed on 3/31/09. This was based off of Sam Adam's Summer Ale.

Recipe
1 Whispering Wheat HME
1lb Munton's Light DME
2 Grated Lemon Rinds
0.5 oz Saaz Hops
2 grams Seeds of Paradise
Munich German Wheat Beer Yeast

Water was brought to a boil, lemon zest added while heating. Once heated hops, Seeds of Paradise the DME were added and the water was kept rolling for 5 mins around 150F. The wort was then removed from heat and the Whispering Wheat was added. The yeast was hydrated per instructions on yeast packet.

Bottled a tad late on 4/16/09. Spice of the Paradise Seeds shone through nicely and also picked up a nice floral aroma/taste from the yeast and hops.

#10 Pilothouse Pilsner

This was brewed 3/25/09. It was the standard Pilothouse Pilsner recipe off the Mr Beer Website. It was also Bonesaw's first use of a liquid yeast.

Recipe
2 Pilothouse Pilsner HME
Liquid Draft Yeast

Water was brought to a boil, added the HME. Yeast was activated per instructions on back of packet.

Bottled very late on 4/16/09. Should be a very drinkable beer.

#9 House Wheat Tweak

This was brewed on 3/13/09. This was a tweak on the original House Wheat. Witty Monk was used instead of the Whispering Wheat for a base.

Recipe
1 Witty Monk HME
1lb Munton's Wheat DME
1 Grated Orange Rind + Hand squeezed juice
1 Cup Honey
Munton's Yeast

Water was brought to a boil, orange zest added while heating. Once heated honey was added and the orange was hand squeezed and juice was added. The DME was added and the water was kept rolling for 5 mins around 150-160F. The wort was then removed from heat and the Witty Monk was added. The yeast was hydrated per instructions on yeast packet.

Bottled a tad late on 4/5/09.

#8 Wheat Ailment

This was brewed on 2/24/09. This recipe was based off the Mom's Honey Wheat Treat by Mr Beer. I'm hoping for a nice wheat/ale mix.

Recipe
1 West Coast Pale Ale HME
1 Golden Wheat UME
1/2 Cup Honey
1/2oz Hallertau Pellet Hops
Munton's Yeast

Water was brought to a boil and honey was added. Added the hops and let the water roll for 5 mins around 150-160F. Removed from the heat and added the WCPA and UME. Yeast hydrated per instructions on back of the packet.

This was bottled on 3/12/09. The trub bottle was cracked early on 3/24/09. This beer definitely needs a few weeks of conditioning time, it had a cidery taste to it. The 2nd trub bottle was cracked on 3/31/09. The week of conditioning definitely helped, cider taste is gone. With the addition of a lemon slice this beer was very tasty.

#7 Quaker Stout

This was brewed 2/24/09. It was the standard Sticket Wicket Oatmeal Stout recipe off the Mr Beer Website.

2 Sticket Whicket Oatmeal Stout
Munton's Yeast

Water was brought to a boil, added the HME. Yeast was hydrated per instructions on back of packet.

This was bottled on 3/10/09. Slight hiccup with a few bottles, never use Peroni or similar bottles again. Capper will NOT cap these bottles. Trub bottle was opened on 3/25/09. This beer is more than drinkable and a delightful change to anything ever brewed at Bonesaw. This beer will certainly go fast.

#6 Black-Eye Bock

This was brewed on 2/15/09. This brew was my own variation of the Brew Ha Ha Bock listen on the Mr Beer website. The recipe is supposed to be somewhat of a Shiner Bock clone.

Recipe
1 High Country Canadian Draft
1lb Munton's Amber DME
1 Booster Packet
Munton's Yeast

Water was brought to a boil, while heating the booster was mixed in. Added the DME and continued to boil for 5 mins. Removed from heat and added the HCCD. Yeast was hydrated via instructions on back of packet.

This was bottled on 3/08/09. The trub bottle was cracked on 3/22/09. This beer certainly has potential, but is not ready yet. Will try again in a week or so.
